They’re called Banana Skins (the weapon) so I imagine Donkey Kong would rather eat the banana that was inside rather than the skin itself.
I think he eats them and then leaves the skins in a big pile for all the mushrooms to store them in the question mark boxes.

actually, I would like to add this- I stepped on a banana peel laying in the street to be a “funny-girl”…turns out, all the jokes and exaggerations weren’t really jokes and exaggerations
